We met my mom in Marion at Penguin Point (which is what I was raised on because my parents managed several of them throughout my life).  I love love love their food still after all those years.  However, I packed a lunch for myself and everyone ate outside on their picnic area as to help me avoid the odor of french fries.  Phew...dodged that bullet.  
But then dinner came around and my daughter chose Cebollas.  At that point I started to get a little anxiety.  I emailed the nutritionist beforehand and she suggested something that of course isn't close to what I would normally choose when I eat Mexican food.  It was an AMAZING Mixteca salad with no tortilla crumbs and the chipotle dressing on the side.  So full of flavor!  It's great to know that when we do have to eat out, that we can choose healthy options with tons of flavors.  I'm actually going to try to mimic that salad to make at home too.

Mixteca Salad - romaine lettuce, pico de gallo, black beans, corn, red pepper, avocado, and grilled chicken garnished with cilantro. I had just a little of the chipotle dressing on the side. It was so good.

ReplyDeleteGreat job in working on making the day special for your daughter but working on your plan. I also like your idea of taking what tasted good and develop a way to make it on your own to enjoy in your control. You are going the correct way.
